Coffee Brewing Guidelines
Ground Coffee Measurements
1 Coffee Cup (6 fl oz)
2 Tablespoons of finely ground drip coffee (0.4 oz or 11.34 grams)
1 Quart (32 fl oz)
2.13 oz or 64.4 grams of finely ground drip coffee
1 Liter (33.8 fl oz)
2.25 oz or 64 grams of finely ground drip coffee
These are the standard weights for drip coffee as defined by the
Specialty Coffee Association Of America. Properly made, the water
will be just off boil(195-205 F) and the brew time will be 4-6 minutes
regardless of the amount of coffee being brewed. Thus, a commercial
brewer will have a much larger basket and a water flow than a four
cup brewer.
Clearly, there can be some variance in these measurements according
to the roast and variety of coffee, but this is a good guideline
Common Brewing Mistakes
If your coffee tastes "bitter" you may have:
-
used too little coffee, too finely ground
-
brewed your coffee with an overlong brewing
cycle(overextracted)
-
"cooked" your coffee by holding it
on the burner too lng after brewing
If your coffee tastes "weak" you may have
- not used enough coffee
- ground your coffee too coarsely for drip method
- not brewed your coffee long enough (water ran through the grounds
in less than four minutes)
